Pão de queijo are cheese rolls popular across Brazil that are made from cassava flour (polvilho). These are available in almost every corner (bakery, snack bar, bistros) and are not only eaten for breakfast. The basic ingredients are cassava starch, eggs and cheese. The main characteristics of this product are the crispness of the crust and the softness of the dough. It also has a very pleasant cheese and cassava flavor.

Preparation:

- put 1 kg of the AMAFIL cheese bread mixture in a bowl. Add 8 eggs and 400g of grated cheese and knead well;

- gradually add 400 ml of water and mix until a homogeneous dough is formed;

- divide the dough and shape balls of the desired size. Place these on a baking sheet with a space of 4 cm between them so that they don t stick together;

- bake the rolls in an oven preheated to 200 degrees for 25 to 30 minutes or until they are lightly browned.

Preparation note:: Zubereitung: 1 - Mischen: 1 kg der Backmischung für Pão de Queijo Amafil in eine Schüssel geben. 8 mittlere Eier und 400 g geriebenen Käse (vorzugsweise Mozzarella oder eine schnittfeste Sorte) hinzufügen. Alles gut durchkneten. 2 - Wasser hinzufügen: Nach und nach 400 ml Wasser (Zimmertemperatur) unterrühren und gut vermengen, bis ein homogener Teig entsteht, der zwar an den Händen, aber nicht mehr an der Schüssel klebt. 3 - Formen: Den Teig in gleichmäßige Portionen teilen und zu Bällchen in der gewünschten Größe formen. Auf Backbleche verteilen. Bei Bedarf die Hände mit etwas Margarine einfetten. 4 - Backen: Im vorgeheizten Backofen bei 200 °C ca. 25 bis 30 Minuten backen, bis die Käsebrötchen leicht goldbraun sind. Ergibt ca. 70 Brötchen à ca. 30 g
