DOÑA MARIA Spice Paste, 360g
Mole is a traditional Mexican sauce and spice paste. In modern-day Mexico, the term is used to refer to various sauces, e.g. ‘mole negro’ (black), ‘mole colorado’ (red), ‘mole verde’ (green), almendrado, de olla, guacamole, etc.
The sauce usually contains fruit, chillies, nuts and spices such as black pepper, cinnamon and cumin. The word ‘mole’ comes from the word ‘mulli’ in the indigenous Nahuatl language and roughly translates as sauce, mixture or stew.
