Oaxaca cheese, a type of string cheese, is also known as ‘quesillo’. It is named after the state of Oaxaca in southern Mexico. The unusual appearance of Queso Oaxaca is due to its production process: many strands form during curdling. These strands are wound together to form a ball.
Oaxaca cheese melts beautifully and easily. It is often used in quesadillas, stuffed chillies or other dishes where melted – but not runny – cheese is desired.
