Coxinhas are crispy croquettes that are usually made with a filling of chicken and catupiry (a soft, creamy cheese). The filling is surrounded by a layer of choux pastry, breaded with golden bread crumbs and deep-fried. Coxinhas are shaped like a drop to represent the shape of a chicken leg (coxa).
